Stephen Hewitt has 16 years experience as a Pastry Chef working at top five star hotels around the world.He has won the Gold Award as Pastry Chef for the International Culinary Welsh Team. In the last seven years his passion for chocolate has intensified. Using his experience as a pastry chef and creative flair, he creates amazing chocolate sculptures, handmade truffles and showpieces. Living and working in North Wales, Stephen has developed a reputation for his amazing cakes and desserts. Forget the main course – desert is where it really happens, our selection of mouth-watering cakes and deserts will have your guests demanding your secrets!
You will be working with choux pastry and preparing a range of classic patisserie desserts, including:
CHOUX PASTRY TREATS
- Profiterole Roles
- Chocolate Eclairs
- Choux Swans
- Bread rolls and creative loafs
All filled with scrummy Welsh Chantilly Cream and dipped in Belgium Chocolate.
PLATED DESSERTS & PETIT FOURS
- Fruit Bakewell/Mini Bakewells
- Belgium Chocolate & Raspberry Tart
- Thin Crust Pizza (this will be your own creation for lunch)

We will even compliment your very own pizza for lunch with a glass of wine.
After lunch we will decorate and finish off our patisserie culinary delights, ending the day on a high, with a master class taster on the Art of Tempering Chocolate, producing your very own chocolate bar.
